Cheddar Cornbread Frittata

Frittata is a perfect dish for breakfast, brunch, lunch or as a snack on the go. This frittata is chock full of chunks of cornbread, cubes of cornbread, diced ham and a spicy, cheesy custard baked in a hotel pan until firm.


Servings: 24

1 gal. cubed, prepared cornbread

1 1/2 lb. diced ham (1qt.)

24 large eggs, lightly whisked (approx. 1 1/2 qt.)

1 qt. Lucky Leaf® Cheddar Cheese Sauce plus more for garnish, if desired

2 Tbsp. chili powder

2 cups milk


  1. Preheat oven to 325º F. conventional oven/ 300ºF. convection oven
  2. Grease a full-size hotel pan and spread cornbread cubes into and even layer over bottom of pan. Top with an even layer of diced ham.
  3. In a bowl combine eggs, cheese sauce and chili powder and mix well. Whisk in milk until smooth. Pour custard over cornbread cubes and ham, cover and refrigerate 20-30 minutes.
  4. Uncover and bake in preheated oven for 30 to 40 minutes or until golden and just set.
  5. Remove from oven and let frittata stand 15 minutes before cutting into 24 x 3-4 inch pieces and serve with salsa and sour cream and a drizzle of cheese sauce if desired.

Tip: For a vegetarian version replace the ham with 1 qt. sautéed onions and peppers.
