Frittata is a perfect dish for breakfast, brunch, lunch or as a snack on the go. This frittata is chock full of chunks of cornbread, cubes of cornbread, diced ham and a spicy, cheesy custard baked in a hotel pan until firm.
1 gal. cubed, prepared cornbread
1 1/2 lb. diced ham (1qt.)
24 large eggs, lightly whisked (approx. 1 1/2 qt.)
1 qt. Lucky Leaf® Cheddar Cheese Sauce plus more for garnish, if desired
2 Tbsp. chili powder
2 cups milk
Tip: For a vegetarian version replace the ham with 1 qt. sautéed onions and peppers.
