Tangy lemon and sweet luscious blueberries are a winning flavor combination for this whole wheat French toast – a decadent brunch item made healthy.
3 cups milk
3 cups Lucky Leaf® Premium Clean Label Lemon Pie Filling
3 tbsp ground cinnamon
2 tbsp vanilla extract
1/2 tsp salt
1 1/2 cups unsalted butter
48 slices day-old whole wheat bread (each 1/2-inch thick)
3 cups Lucky Leaf® Premium Blueberry Fruit Filling
1/2 cup poppy seeds
1. In large bowl, whisk together eggs, milk, Lucky Leaf® Premium Clean Label Lemon Pie Filling, cinnamon, vanilla and salt.
2. Per serving: Heat 1 tbsp butter in nonstick pan set over medium heat. Dip 2 slices of bread in batter; shake off excess. Pan-fry bread, turning once, for 3 to 5 minutes or until golden brown and set. (Alternatively, cook in batches on flat top or tilt fryer; keep warm.)
3. Plate 2 pieces French Toast per serving. Top with 2 tbsp Lucky Leaf® Premium Blueberry Fruit Filling. Garnish with 1 tsp poppy seeds.
