Strawberry Scoop Cake

Using a basic cake mix, this cake-like pudding is dense with strawberry flavor, rich with chocolate and easy to make and serve.

Servings: 24

1 1/2 qt. LUCKY LEAF® Strawberry Pie Filling

8 cups strawberry cake mix

1 cup unsalted butter, melted

2 cups white chocolate chips

Frozen whipped topping, thawed, for garnish, if desired


  1. Pre-heat oven to 350°F.
  2. Spread Lucky Leaf® Premium Strawberry Pie Filling into bottom of a greased full-size hotel pan.
  3. In a bowl, toss together cake mix and butter until crumbly. Sprinkle crumbs evenly over top of Pie Filling. Bake 30 minutes. Remove from oven and sprinkle top evenly with white chocolate chips, return to oven; continue to cook another 1520 minutes or until crumb topping is starting to turn golden, mixture is bubbling and chocolate pieces are melted. Remove from heat. Serve warm.
  4. To serve, use a 1-cup scoop to portion dessert. Top with whipped topping to garnish, if desired.
