Grilled Chicken or Turkey with Cherry BBQ Sauce

This lush, versatile fruit-based barbecue sauce can be used as a marinade or final baste to any burger, steak, poultry or game.

Ingredients

Servings:

7 1/2 lb. boneless turkey or chicken breast, pork loin, beef steaks
1/3 cup vegetable oil
1/4 cup BBQ dry spice blend
2 qt. (about 56 oz.) LUCKY LEAF Cherry Pie Filling
2/3 cup soy sauce
2/3 cup dry sherry
1/4 cup minced fresh ginger
1/4 cup minced garlic
1 Tbsp. hot red pepper sauce
2-3 tsp. ground allspice

Method

  1. Lay turkey chicken, pork or beef out on full-size sheetpans. Brush or spray with oil and sprinkle evenly with BBQ Rub. Cover and refrigerate at least 4 hours before preparing as directed.
  2. In the meantime, in a large saucepan combine Cherry Pie Filling, soy sauce, sherry, ginger, garlic, hot sauce and allspice and bring to a boil; reduce heat and simmer over medium heat 20 to 30 minutes. Remove from heat and let cool slightly. Take half of mixture and process it until smooth. Use as a BBQ sauce to baste the meat to finish. The remaining half may be served as an accompaniment to the cooked meat.
  3. To Serve: Grill meat portions until almost completely cooked through and nicely golden. Remove from heat and place on parchment-lined sheetpan. Brush with pureed BBQ sauce and bake in a 375°F. convection oven until crispy brown and slightly caramelized. (Extra BBQ sauce may be brushed on during baking period, if desired.) Serve with French-fried sweet potatoes, creamed corn and steamed broccoli. Serve each portion with approximately 3 Tbsp. of unprocessed/chunky BBQ sauce as a condiment.
