Double Blue Burger

BBQ-spiced burgers on grilled ciabatta rolls are served topped with caramelized BBQed onions, crumbled blue cheese and a rich, lush chutney made with Blueberry Pie Filling for a perfect pairing of spicy, sweet and savory.



1/4 cup vegetable oil, divided
1 cup minced sweet onion
2 Tbsp. minced garlic
1/2 cup cider vinegar
1/2 cup water
1 Tbsp. yellow mustard seed
2 cups Lucky Leaf Blueberry Pie Filling
1/4 cup low-sodium soy sauce
1 Tbsp. hot red pepper sauce
2 qt. sweet onion rings
2 1/2 Tbsp. BBQ spice rub, divided
24 x 6-oz. beef burgers
3 cups/ 9 oz. crumbled blue cheese
24 ciabatta rolls, split, grilled


  1. In saucepan heat 2 Tbsp. oil over medium-high heat; add onions and sauté 2 minutes. Stir in garlic and continue to sauté 1 minute.
  2. Pour in vinegar, water and mustard seed and bring to a boil; reduce heat and simmer 2 minutes.
  3. Stir in Lucky Leaf Blueberry Pie Filling, soy sauce and hot sauce and bring to a simmer. Reduce heat and simmer 5 minutes. Remove from heat. Keep warm. Use as directed.
  4. In a large skillet, heat remaining 2 Tbsp. oil over medium heat; add onion rings and sauté 5 minutes. Shake in 1 1/2 Tbsp BBQ spice rub. Pour in 1/2 cup water, cover and continue to cook 5 minutes. Remove lid and cook until liquid is evaporated and onions caramelize and become golden brown. Remove from heat and keep warm and use as directed.
  5. Lay out burgers on sheetpan and sprinkle top of burger with remaining 1 Tbsp. BBQ spice rub. Cover and refrigerate until ready to prepare.
  6. To Serve: For each burger, grill burger, on both sides, to desired doneness. Place 2 Tbsp. caramelized onions on the bottom of a grilled ciabatta roll. Top with burger, 2 Tbsp. Blueberry Chutney and 2 Tbsp. crumbled blue cheese and roll top just before serving.
