Roast Beef Dip Sandwich with Apple Butter Dijon Jus

With the addition of Musselman’s® Apple Butter Fusions Dijon, this tasty roast beef sandwich with dip delivers delicious flavors.


Roast Beef Dip Sandwich with Apple Butter Dijon Jus

Ingredients

Servings: 24

Apple Butter Dijon Jus:

1/4 cup (60 mL) butter

12 cloves garlic, minced (8 tbsp/2 oz)

1/4 cup (0.04 oz) finely chopped fresh rosemary

3 cups (24 fl oz) red wine

12 cups (96 fl oz) sodium-reduced beef broth

1 1/2 cups (12 oz) Musselman’s® Apple Butter Fusions Dijon

 

Roast Beef Dip Sandwich:

1 lb (16 oz) butter, melted

24 demi-baguettes, toasted and split

72 oz slice roast beef, warmed

48 slices Swiss cheese (each slice 1/2 oz)

6 cups (7.5 oz) arugula

1 1/2 cups (15 oz) Musselman’s® Apple Butter Fusions Dijon

Method

  1. Apple Butter Dijon Jus: Melt butter in large saucepan set over medium heat; cook garlic and rosemary for 1 to 2 minutes or until fragrant. Stir in red wine; cook until reduced by half.
  2. Stir in broth and Apple Butter Fusions Dijon; bring to boil. Reduce heat to medium-low; simmer for 20 to 30 minutes or until reduced to about 12 cups.
  3. Roast Beef Dip Sandwich: For each serving, brush 2 tsp (10 mL) melted butter over bottom of each demi-baguette. Layer 3 oz roast beef, 2 slices cheese and 1/4 cup (0.3 oz) arugula on top. Drizzle with 1 tbsp (15 mL) Apple Butter Fusions Dijon. Serve with 1/2 cup (4 fl oz) Apple Butter Dijon Jus.

Tip: For a flavorful cheese substitute, use Gruyère instead of Swiss cheese.
