Servings: 24

3 Tbsp. olive oil, divided

1 1/2 lb. chicken-apple sausage (cut into 1/4-inch slices)

1 1/2 qt. sliced sweet onion (1/4-inch-thick slices)

3 x 16-oz. balls of pizza dough

1 1/2 qt. (approx. 64 oz.) LUCKY LEAF® Apple Pie Filling

1 qt. shredded provolone or Gouda cheese

3 cups lightly packed baby arugula, shredded

  • Preheat oven to 425°F conventional or 375°F convection.
  • In large skillet, heat 1 Tbsp. oil over medium-high; add sausage slices and sauté 5-6 minutes or until browned, stirring occasionally. Remove browned sausage slices from skillet and drain; hold.
  • Add reserved 2 Tbsp. oil to skillet and heat; add onion and sauté 8-10 minutes or until tender and slightly caramelized. Remove from heat and cool to room temperature.
  • Roll out each ball of pizza dough into a 14-inch round and place in a prepared pizza pan or pizza stone. Bake dough for 8 minutes. Remove from heat.
  • Spread 1 1/2 cups apple pie filling evenly over top of each hot pizza crust. Top each pizza evenly with 1 cup sautéed onion and 6 oz. sausage slices. Sprinkle top of each pizza with 1 1/3 cups shredded cheese. Return pizzas to oven and continue to bake 10-15 minutes or until cheese is melted and crust is golden. Remove from heat.
  • To Serve: Sprinkle top of each hot pizza with 1 cup shredded arugula and serve, sliced into 8 slices.
