Georgia Peach Glaze

Sautéed onions, garlic and red peppers are simmered with Peach Pie Filling, vinegar and spices until thickened to use as a glaze or topping for grilled or roasted meats, game, poultry or vegetables as well as a spread for sandwiches.

Ingredients

Servings:

2 Tbsp. canola or vegetable oil
1 cup minced sweet onion
1 Tbsp. minced garlic
1 cup finely chopped red bell pepper
1 qt. Lucky Leaf® Peach Pie Filling
3/4 cup white wine vinegar
1/4 cup soy sauce
1 tsp. ground nutmeg
1/4 tsp. red pepper flakes
1 to 2 cups water
1 cup chopped parsley or cilantro, optional

Method

  1. In a saucepan, heat oil over medium-high heat; add onions and sauté 3 minutes. Stir in garlic and continue to cook 1 minute, stirring constantly. Add bell pepper and sauté 2 minutes.
  2. Stir in Peach Pie Filling, vinegar, nutmeg and pepper flakes; bring to a low boil; add water and reduce heat to low and simmer, stirring often until thickened, about 20-25 minutes. Adjust consistency with more water if necessary.
  3. Remove from heat, place in covered container and cool to room temperature. Stir in chopped parsley or cilantro, if desired. Refrigerate at least 2 hours before using as a glaze for grilled chicken, pork or turkey as well as an accompaniment for dipping for baked, breaded chicken or shrimp.
