A simple cake batter is baked in sheet pans, topped with cherry pie filling and dolloped with more batter to add moisture, texture and sweetness to the cake.
3 1/2 cups all-purpose flour
2 Tbsp. baking powder
1/4 tsp. Kosher salt
2 cups granulated sugar
1 1/2 cups vegetable oil
1 1/2 cups liquid eggs
2 tsp. vanilla extract
1 qt. LUCKY LEAF® Premium Cherry Fruit Filling
2 Tbsp. granulated sugar
1 tsp. ground cinnamon
Preheat oven to 350°F. Lightly grease a half sheet pan.
In a bowl, mix together flour, baking powder and salt. Hold.
In a mixing bowl equipped with a paddle attachment, beat together sugar, oil, eggs and vanilla; mix until smooth. Add dry ingredients and mix until smooth. Spread 2/3 of the batter into prepared pan. Smooth out top until even.
Spread Lucky Leaf® Cherry Pie Filling over top of batter. Drop the remaining batter by spoonfuls on top of the pie filling layer. Mix together the sugar and the cinnamon and sprinkle over top of cake.
Bake for 44-50 minutes, or until a toothpick inserted near the center comes out clean. Remove from heat and let cool on a rack for 30-40 minutes before cutting into 24 equal pieces.
