Oatmeal & Apple Butter Bars

A quick and easy treat that makes a perfect grab-and-go snack. Lining the pan with foil makes removal a breeze.

Ingredients

24 (3 1/4" x 3") squares
3 1/2 cups All-purpose flour
3 1/2 cups Old fashioned or quick oats (not instant)
2 3/4 cups Light brown sugar
3/4 tsp. Salt
1 3/4 cup Butter, melted
Non-stick baking spray (as needed)

Method

1
Preheat oven to 350°F conventional or 300°F convection. Line a half-size sheet pan with foil, leaving extra overhangs on the ends. Spray foil with baking spray.
2
In a large mixing bowl equipped with whip, whisk together flour, oats, brown sugar and salt. Stir in butter with paddle attachment just until mixture forms clumps.
3
Press half the mixture evenly into lined sheet pan. (Tip: For even bars, top dough with a sheet of parchment and press another pan on top to even out dough.)
4
Spread dough evenly with apple butter. Crumble remaining half of dough on top.
5
Bake about 35 minutes or until bars are light golden brown. Cool completely in pan on wire rack.
6
Cut into bars and remove from pan using foil overhangs. Refrigerate any leftover bars.
