Apple butter adds the right thickness and richness to this classic side dish.
24 x 1/2 cup servings
1 qt. (2 lb.) dry navy or great northern beans
2 cups onion, chopped
1 lb. turkey bacon, cooked and crumbled
1 qt. (about 40 oz.) MUSSELMAN'S Apple Butter
1 Tbsp. dry mustard
1 tsp. salt
1 tsp. ground black pepper
Rinse and drain beans. In large pot, combine beans and cover with water. Let stand over night. Drain.
Place beans in large pot and cover with 1 gallon water. Bring to a boil, reduce heat and simmer, covered, for about 1 1/2 hours or until beans are just tender, stirring occasionally. Drain.
Transfer to 2 gallon (deep half steamtable pan) or casserole or bean pot. Add onion and bacon. Stir in apple butter, mustard, salt and pepper. Bake in 300°F oven, covered, for two hours. Uncover and bake to desired consistency, stirring occasionally. Serve hot.
