What’s not to love? This dish hits all the hot points for your customer: it’s pizza and Mexican all in the same dish. And it’s easy to prepare. Cheese Sauce is spread on individual flatbreads and topped with onions, peppers, corn and black beans and baked to serve garnished with salsa and guacamole.
Tbsp. vegetable oil
chopped sweet onions
tsp. minced garlic
cups diced multi-color bell pepper
cups, frozen corn kernels, thawed
cups canned black beans, drained
2 qt. Lucky Leaf® Cheese Sauce
1/2 cups grated Parmesan
cups fresh salsa
oven to 400ºF.
In a large sauté pan, heat
oil over medium-high heat; add onions and cook 2 minutes. Stir in garlic and
sauté 1 minute. Mix in peppers, corn and beans and sauté to heat through,
approximately 2-3 minutes. Remove from heat and hold.
For Each Flatbread Pizza:
Spread the top of each flatbread evenly with 1/3 cup cheese sauce. Sprinkle
each evenly with 1/2 cup vegetable mixture and sprinkle top with 1 Tbsp. Parmesan
Bake 12-15 minutes. Cool
slightly, quarter and serve topped with 2 Tbsp. salsa and 2 Tbsp. guacamole.
