Lucky Leaf
Fruity Frosting

A light whipped fruit frosting that will make any cake a delight.


3 qt. frosting
1 qt. sugar
1 1/3 cups water
1 1/3 tsp. cream of tartar
8 large egg whites
2 Tbsp. vanilla extract
1 qt.  (about 36 oz.)  of your favorite LUCKY LEAF Pie Fillings 


In stainless steel saucepan over medium high heat, bring sugar, water and cream of tartar to a boil; continue to boil until syrup spins a thread.
While syrup cooks, beat egg whites until stiff enough to hold a point. When syrup is ready, very slowly pour the hot syrup in a thin stream into the stiffly beaten egg whites, beating constantly. Add vanilla and pie filling. Continue beating until frosting holds its shape. Spread 1 to 1 1/2  cups frosting per layer of cake and along sides.
