Chocolate Chip Cherry Bars


Who could resist a dessert bar with layers of an oatmeal-chocolate chip cookie crust spread with a cream cheese-vanilla layer, topped with Cherry Pie filling and topped with more cookie topping?

Ingredients

24 servings
24 oz. prepared chocolate chip cookie dough
1 1/4 cups quick-cooking rolled oats
12 oz. cream cheese, at room temperature
1/2 cup granulated sugar
2 large eggs, lightly beaten
1 1/2 teaspoon vanilla extract
1 qt. (32 oz.) LUCKY LEAF® Premium Cherry Fruit Filling 

Method

Preheat oven to 350°F. conventional or 300°F. convection. Lightly grease and flour 1 half sheet pan (12" x 17").

In large bowl combine prepared cookie dough with oats and knead until combined. Press 2/3 of dough mixture into an even layer in bottom of prepared half sheetpan. Bake 12-14 minutes or until cookie crust is set. Remove from heat and cool on wire rack.

Meanwhile, in mixing bowl equipped with a paddle beat cream cheese and sugar together until smooth. Add eggs and vanilla and mix on medium until smooth.

Carefully spread cream cheese mixture evenly over cookie crust. Top evenly with LUCKY LEAF® Premium Cherry Pie Filling. Dot top of pie filling with remaining unbaked cookie dough and continue baking 20-25 minutes or until top is lightly browned and center appears set when lightly shaken. Remove from heat and cool completely. Cover and chill at least 2 hours or overnight before cutting into 24 bars.
