Apple Butter BBQ Sauce


Ingredients

1 qt.
1 Tbsp. olive oil
2 cups minced sweet onions
2 tsp. smoked paprika
1 tsp. garlic powder
2 cups MUSSELMAN'S® Apple Butter
1/3 cup MUSSELMAN'S® Apple Cider Vinegar
2 Tbsp. Dijon mustard
2 Tbsp. tomato paste
11 1/2 cups water
Salt and cracked black pepper, as needed

Method

In a large saucepan, heat oil over medium-high heat; add onions and sauté 56 minutes. Mix in the paprika and garlic powder and cook 1 minute.

Add all remaining ingredients and bring to a boil. Reduce heat and simmer sauce 15-20 minutes or until thickened and flavors have melded. Remove from heat.

Cool sauce and use as desired.

Flavor Variations

Asian: Add 2 Tbsp. minced ginger with onions. Replace Apple Cider Vinegar with rice wine vinegar and add 1 tsp. chili with garlic sauce with other ingredients. Finish with fresh chopped cilantro.
Southwestern: Add 1/4 cup lime juice, 1 1/2 Tbsp. minced chipotle in adobe, 1 tsp. oregano and finish sauce with minced cilantro.
Thai Curry: Replace the vinegar with 1/3 cup rice wine vinegar, add 2 tsp. red or green curry paste and 1 Tbsp. fish sauce. Finish sauce with a touch of lime juice, cilantro and Sriracha sauce.
Southern Style: Add honey or molasses and white vinegar instead of Apple Cider Vinegar; mix in a few drops of liquid hickory smoke during cooking. Beer could replace water for cooking liquid, if desired.
