Apple Braised Pork Loin

Pork loin is rubbed with a BBQ seasoning mixture and oven-braised in caramelized onions and garlic along with Apple Juice, Apple Sauce and molasses until fork-tender and serve sliced accompanied by the apple-rich braising liquids.

Ingredients

8 lb. pork loin, trimmed

1/2 cup BBQ seasoning rub (dry mustard, smoked paprika, garlic, thyme, salt, cracked black pepper, cumin, cinnamon)

2 Tbsp. vegetable oil

1 qt. sliced sweet onions

2 Tbsp. minced garlic

2 cups veal or beef stock

2 cup Musselman's Apple Juice

3 cups Musselman's Chunky Apple Sauce

1/2 cup molasses

 



Method

Preheat convection oven to 300°F.

Rinse and dry pork loin. Rub loin evenly with spice rub mixture. Hold.

In a heavy, large braisier or rondo with lid, heat oil over medium-high heat; add pork loin and brown evenly on all sides. Remove from pot and hold.

 In pot, saute onions 3-4 minutes. Stir in garlic and continue to cook 2 minutes.

Pour in Apple Sauce, Apple Juice and molasses and bring to a simmer. Return pork to pot and place lid on top. Place in oven and bake 2 1/2 - 3 hours or until the pork is fork tender. Remove from oven. Remove pork loin from cooking liquid. Place on a cutting board and tent with foil.

Slice pork and serve over noodles or mashed potatoes with 1/4 cup sauce per serving.
